AOTO Japanese Natural Sharpening Stone from Kameoka, Tanba 1782g (3lb. 15oz.)

around #2000 to #3000 grit (fine grit)

It is a nice size very nice shape hard Aoto whetstone that is hard to come by.

It raises light amount of slurry, and it is very hard side Aoto, and it is hard like hard fine grit stone.

(Scale; 1 to 10, 1-3 is very soft muddy rough grit whetstone 3-6 is soft medium grit whetstone, 6-8 is hard medium grit whetstone, 8-10 is fine grit whetstone)

Particle Size--------- 8.2 (Scale; 1 to 10, 1-3 give deep scratch marks to the steel, 3-5 is delete the 1-3 scratches, 5-8 makes the steel cloudy, 8-10 makes the steel semi-mirror finish or mirror finish)

My blue II steel blade knife Jigane became silver color with fine whetstone marks, and Hagane became bright silver color with fine whetstone marks. It is not normal Aoto, it is more like fine grit stone.

I do not know exactly which mine it is from, but I purchased it from Kameoka whetstone company, so it is from Kyoto, Kameoka for sure. It is very hard to bring in Aoto nowadays , and the most of whetstone companies run out of Aoto stock now.

AOTO whetstone from Kameoka, Kyoto is very famous as Tanba no Aoto in Japan as medium high or lower fine finish whetstone. It has been mined from Kameoka , Kyoto since Muromachi era (1338-1573).

It is used after sharpened medium grit whetstone, and it is good enough for cooking knife as finishing whetstone unless we need very fine finish on the blade.

It is little bit rough sharpening compared with fine grit whetstone is used for finishing process, but the roughness makes easier to cut into meat or fish fillet or vegetables. Aoto makes hardly to get burr on the other side of the blade after sharpening. It has also great positive effect using Aoto before Awasedo (fine grit finishing whetstone) process. What is Aoto removes all small hair line scratches derived from rough and medium whetstones, and transition from Aoto to Awasedo give nice fit and great result.

Natural whetstone has more wide capacity than artificial whetstone, and actually, we do not know until sharpen blade on the stone. Sometimes, treasure whetstone is found after used it for a while. Never know until then.
