HANDLE; Western Style Handle with Rose Wood BLADE; A Special alloy of Japanese Steel for suitable for Gyuto. It is called A-Style by Aritsugu. Most of Stainless Steel knives contain 14% to 15% of Chrome. The steel of A-Style knife by Aritsugu is original steel, and it contains 7 % of Chrome, so it can keep on sharper edge than stainless steel blade. HRC of A-Style steel is 60 + 1 or - 1. It is little bid softer than Aritsugu White II steel and Blue II steel knife blade, but it is harder to rust or getting stain on the blade.
