Aritsugu Deba 195mm White II Steel blade Knife
ARITSUGU originally started as Japanese master sword smith, Fujiwara Aritsugu over 400 years ago. Tsukiji Aritsugu established on own business from Kyoto Aritsugu in Nihonbashi, Tokyo in 1917. Aritsugu has been family business creating the finest quality knives and cooking utensils to top Japanese chefs for a long time. Aritsugu family has continued to pass along the forging techniques preferred by the imperial family since 1560. It is located on Tsukiji Fish Market in Tokyo, where is well-known as world biggest fish market.
Blade length is 7 3/4 inch (195mm). The handle length is 5 1/2 inch (140mm) The total length of the knife is 13 1/4 inch (335mm) The knife weight is 15.0oz. The thickness of the spine nearby the heel; 5/16 inch (8mm)
This knife is a good size for a small size job to large size job. This knife is designed for filleting fish, or taking off meat from the bone, or cutting Lobster or crab leg, or working on something little bit bony stuffs, because Deba knife has the way thicker blade than regular knives.
Handle: Japanese Magnolia with water buffalo bolster. The blade is made out of pure high carbon Steel (white 2 steel) which is very suitable for Deba knife that is easy to sharpen and retaining sharp edge longer. It is Kasumi style blade which is steel on the blade edge, and entire flat concave back side, and soft iron on the front bevel side. Those different hardness iron and steel combinations make easier to sharpen knife, and make the knife stronger, and make it easier on the processes of knife making to be straighten the blade.
