Masamoto knives are used by Japanese professional chefs very much, however; Aritsugu knives are also the one of the knives brands used by Japanese professional chefs as well.
Petty knife is for small job to do like peeling carving that is why it is shorter blade. I understand it logically; however, our hands holding on the knife is same size, not going smaller. Most of petty knives have a smaller handles; why is it? This knife looks odd little bit, because handle length is little bid longer than the blade length; however it works.

Most of Stainless Steel knives contain 14% to 15% of Chrome. The steel of A-Style knife by Aritsugu is an original steel, and it contains 7 % of Chrome. HRC of A-Style steel is 60 + 1 or - 1. It is little bid softer than Aritsugu Shiroko and Aoko steel knife blade.
