ARITSUGU A-Style Petty Knife 7inch (180mm) blade

It started as Japanese Samurai Sword maker, Master Aritsugu Fujiwara. This knife was bought at Tokyo Aritsugu. Located on Tsukiji Fish Market in Tokyo, well known as world biggest fish market. Aritsugu provides top chefs in Japan hand forged knives and cooking utensils.

Petty knife is for small job to do like peeling and carving that is why it is shorter blade. I understand it logically; however, our hands holding on the knife is still the same size, not going to be smaller. Most of petty knives have a smaller handles; why is it? This knife looks odd little bit, because handle length is little bid longer like regular knife, however it works.

Most of Stainless Steel knives contain 14% to 15% of Chrome. The steel of A-Style knife by Aritsugu is original steel, and it contains 7 % of Chrome. HRC of A-Style steel is 60 + 1 or - 1. It is little bid softer than Aritsugu White II steel and Blue II steel knife blade, but it is little more supple blade.
