ARITSUGU Yanagiba Knife 9 1/2inch (240mm) Damascus blade W/ Magnolia Handle and Magnolia Wooden Cover

400 year old family business creating the finest quality knives and cooking utensils. Since 1560, eighteen generations of the Aritsugu family has continued to pass along the forging techniques preferred by the imperial family. It started with Japanese Samurai Sword maker, Master Aritsugu Fujiwara. This knife was acquired at Tokyo Aritsugu. Located on Tsukiji Fish Market in Tokyo, where is well known as world biggest fish market. Aritsugu provides hand crafted knives and cooking utensils to Top Japanese chefs for a long times.

Masamoto knives are used by Japanese professional chefs very well, however Aritsugu knives are also the one of the knives brands used by Japanese professional chefs as well.

Blade Length; 9 1/2inch (240mm) Handle Length; 5 3/8 inch (137mm) Total Length; 15 inch (380mm) Knife weight is 5.3oz. The end part of the back width is 4mm(5/32h) wide.

HANDLE; Magnolia with Water Buffalo horn bolster. WOODEN COVER: Magnolia Wooden Cover with a pin BLADE; So many layers of grain of wood patterns (Damascus). Ao II Ko (Blue II Steel) blade Those layers are constructed by two different steels to pound and hold up so many times with skilled hard works.

This knife is called Yanagiba knife which is used for slicing sashimi, peeling vegetables, and cutting most of soft ingredients. It is just 240mm blade, so it is very good for small kitchen or quick job or small movements. The blade is made out of Yasuki Ao II ko(Blue II steel) which is very suitable for Japanese chef knives. It is very hard steel and hold on the edge very hard. Ao II Ko Steel is added chrome and tungsten to Shiro II Ko steel. It makes it occur endurance on the steel and give it anticorrosive.
