Ikkanshi Tadatsuna Fuguhiki 270mm White II Steel Blade Knife with ebony handle with white line and magnolia wood cover.

Awataguchi Ikkanshi Tadatsuna was originally started by the first Ikkanshi Tadatsuna who is a very famous Japanese sword blacksmith about 400 years ago, and the son of the second Ikkanshi Tadatsuna inherited his father works. Their Japanese swords are very famous unique beautiful ripple line on the blade, and their unique and beautiful metal carving skill at the base part of the blade. Japanese knife brand, Ikkanshi Tadatsuna has inherited their 400 years of Japanese sword making skills.

The blade is made of high quality white steel iron sand from at scratch with just like traditional way to make Japanese sword one by one. The blade is white II steel Hongasumi style blade. Ikkanshi Tadatuna blacksmith is favor to use pure high carbon white II steel, and it comes out so sharp like razor blade. Ebony handle comes with white buffalo line and black buffalo bolster. A fancy shaped Magnolia wood cover comes with it.

The blade length: 270mm (10 1/2 Inch) The total length of the knife: 420mm (16 1/2 inch) The backside of the thickest part of the blade: 3mm (1/8h) The total weight of the knife: 5.4oz.

Fuguhiki is for thin slice of white fish Sashimi. It is lighter weight than Yanagiba, so we can move faster in your kitchen. I highly recommend that it works very well in busy Sushi bar, however it is little more fragile than Yanagiba, because it is thin blade, so we have to take care of the knife well. To put on the second edges prevent to get stronger for chips of the blade edge.
