About This Item
MASASHI Hankotsu Osaka Style Boning Knife Blackish Finish 145mm White II Steel blade with Charred Magnolia D-shaped handle and Magnolia wood cover
I have got very similar knife from Yoshikane in Sanjo, Niigata before. In December 2012, the three of main blacksmiths in Yoshikane have (Mr. Yoshida, Mr. Kazuomi Yamamoto, and Mr. Masashi Yamamoto) started on own business. Mr. Yoshida might make small amount of productions, but he is more like semi-retired, and Mr. Kazuomi Yamamoto has taken over Yoshikane business with a couple of helpers since then. Mr. Masashi Yamamoto has got own business which is Masashi Kobo. This knife is made by Mr. Masashi Yamamoto.
I guess it is originally used for fillet chicken or deboning chicken or deboning meat. It does not have the heel, but it might be a great utility knife.
It is boning knife, so it is thicker than the same length petty knife.
