TESSHU Chef Knife 240mm Blue 2 steel blade with Custom Hawaiian Curly Koa Handle Gyuto
Blue 2 steel (not stainless steel) is high carbon steel made by Hitachi Steel Co. Blue 2 core steel is cladding stainless iron. TESSHU is our Japanese cooking knife brand name and, Kiryu Manufactureing Co. is made the blades which is very skillful craftsmanship in Sanjyo, Niigata. The company which products this blade also makes their blades, and they make so many of the other famous knife makers knives in Japan. They make lots of OEM products, so their name might not come out often.
It is western style handle on it, but it is used Sanmai-uchi which is soft iron (stainless) cladding core steel (blue 2), so it is able to bring up higher HRC compared with mono steel blade. Handle is made by solid Hawaiian curly Koa. We will try to provide high quality selected knives with reasonable prices.
