TESSHU Chef Knife 240mm SG2 High-Speed stainless steel blade with Hawaiian Curly Koa Handle Gyuto with Ho Saya
Super Gold II (SG2) steel is high speed high carbon stainless steel made by Takefu Special Steel Co., Ltd.
It is normally used as drill bit or high speed rotating tool bit or high quality high carbon stainless steel for cutlery steel, etc.
Takefu does not expose the detail of the steel composition, but it is one of high-end class steel for sure. TESSHU is our Japanese cooking knife brand name and, Kiryu Manufactureing Co. is made the blades which is very skillful craftsmanship in Sanjyo, Niigata. The company which products this blade also makes their blades, and they make so many of the other famous knife makers knives in Japan. They make lots of OEM products, so their name might not come out often.
It is western style handle on it, but it is used Sanmai-uchi which is soft iron (stainless) cladding core steel (SG2), so it is able to bring up higher HRC compared with mono steel blade. Handle is made by solid Hawaiian curly Koa. We will try to provide high quality selected knives with reasonable prices.
