Used SHIGEFUSA Nakiri Kitaeji 210mm Double bevel Swedish pure carbon steel Blade Knife With Japanese Magnolia handle (Ho)
It is very rare extra long size Nakiri, probably, it is a custom order Nakiri. Normally, Nakiri is 165mm. Even though longer one is 180mm. This one is extra long one. It is not Usuba, because it is double bevel edge and the both sides have Damascus pattern. ****Blade Length (from the tip to the heel); 8 1/4inch (210mm), From the tip to the machi: 230mm (9 inch) ****
It is used very little, and it ilooks it is almost new condition. I sharpened the edge and polished little bit before taking the photos.
Shigefusa Kitaeji knife is an ideal blade knife that is harder to crook and easier to sharpen the blade, and the knife is very famous with super sharp edge.
Kitaeji (Damascus) style blade is made of so many times holding over Jigane (soft iron) and low carbon steel(Hagane), and it is harder to crook the blade.
Mr. Tokifusa Iizuka who makes Shigefusa knife had been an apprentice in Sanjo Seisakujo(Mr.Kousuke Iwasaki and Mr. Shigeyoshi Iwasaki) for 10 years, and then Mr.Iizuka wanted to be Japanese cooking knife blacksmith, so Mr. Shigeyoshi Iwasaki introduced Mr. Iizuka to Mr.Munenori Nagashima who was legendary blacksmith who makes Japanese sword and Kasumi knife, kitaeji blade, and lots of variety of cutleries. Mr. Iizuka became an apprentice again to learn how to make knives under Mr. Nagashima before starting own business Shigefusa for short period. Mr. Iizuka has two sons (late 40 years old), and Shigefusa Knives are making with those three family members.
