Yoshimitsu Wa Gyuto 270mm White I Steel Blade Chef Knife Octagonal shaped Ho Handle with Ho Saya
Yoshimitsu was established as steel wheel blacksmith in Nagasaki since 1852 There are two things what very famous about Yoshimitsu which works with five Brothers, and the oldest brother who is over 90 Years old president of Yoshimitsu.
The other thing is what Yoshimitsu is very famous that they make own Tamahagane from Iron sand and charcoal burning three days and nights. That is why they can use their knives to Tamahagane and Watetsu.
They make own Hagane and Jigane is used over 200 years old hardware, so they have lots of knowledge and experiences from their works from steel production to the end of process cutlery making.
They also make lots of variety of cutleries. They like to make cutlery for the regional people job demand, such as hatchet, Ax, sickle, and etc.
White II steel B is high carbon pure steel that has 1.0 to 1.1 carbon content, and white I steel B is also high carbon pure steel that is added carbon to white II steel. White I steel B has 1.2 to 1.3 carbon content. Therefore, it is able to be harder steel blade (it means less wear, retaining sharp edge longer), but it is also less viscosity, so we have to use the blade carefully. It is also pure carbon steel, so it has smaller steel structure, and it means it is able to get very fine sharp edge (smaller amount of steel molecule fall apart by sharpening or cutting stress).
It is Sanmai-uchi (soft iron cladding).
